by watching the terminal output

one can get an idea of what is controlling the timestep. in this example, the last field in the third row is "dt_limit", which has the correspond text entry "max increase" meaning mesa is making the timestep as large as possible given the timestep controls above. in your case the dt_limit text will probably be different, but will say what is currently controlling the timestep. with this info you can then experiment with changing the relevant timestep and/or mass loss controls given above.
another best practice is sharing one's inlist(s) in case a mesa-user wanted to look at them to potentially offer guidance.
