i think it is awesome that you want to use mesa for your science fair!

to help understand where things stand, have gotten through http://mesa.sourceforge.net/starting.html ?
if installing mesa is too much, other options exist such as http://mesa-web.asu.edu .

one possibility that aligns with your interests is to explore 
how the isotopic abundances change as a 1 msun star evolves.
