I recommend that you read and work through the "Getting Started" page.
This will answer many of your questions, including how to use the test
suite as a source of examples.

There are test suite examples evolving stars of many different masses
during many different phases.  You can draw on those as well.

Depending on your use-case, you might also be interested to know about

P.S.  The sample directory is an example of how to use a MESA module and
not how to use MESA/star to do stellar evolution, which explains at
least some of your confusion.
